  1. 1 whole chicken, about 3 pounds
  2. 1 onion, chopped
  3. 2 carrots, chopped
  4. 2 celery stalks, chopped
  5. 1 teaspoon salt
  6. 1/2 teaspoon black pepper
  7. 1/2 teaspoon paprika
  8. 1/2 teaspoon dried mint
  9. 1/4 cup chopped fresh parsley


  1. Place the chicken in a large pot and cover with water. Bring to a boil over high heat, then reduce heat to low and simmer for 1 hour, or until the chicken is cooked through.
  2. Remove the chicken from the pot and let cool slightly. Shred the chicken meat and set aside.
