- Pour water into a deep bowl. Add the sourdough that you started feeding the day before. Mix your yeast and water well.Sift the flour, salt twice and make a well in the middle and add the sourdough mixture.
- Start kneading slowly. You will get a sticky, runny dough. Once you have the dough, cover it and leave it for half an hour.
- After half an hour, do your first folding. After the first fold, leave for another half hour. Perform a total of 5 folds at half-hour intervals.
- After folding, sprinkle flour liberally in a saucepan and place a cloth. Flour it generously, place the dough inside and close the lid.
- Place a bowl of hot water in the oven and let your dough rest in this way for another hour.
- Line a baking paper preferably in a cast-iron baking dish. Place the dough you left to ferment, shape it and close the lid. Start heating your oven to 200 degrees. Keep a bowl of water in your oven.
- When your oven is hot, put your bread in the oven. Cook for 40 minutes with the lid closed and 20 minutes with the lid open. You can enjoy it when cooked.
