Juice of ½ lemon
Instructions
Sauté onion in olive oil until soft.
Stir in tomato paste and cook briefly.
Add orzo and broth; simmer until tender.
Season with salt, pepper, and dried mint.
Remove from heat and stir in lemon juice. Serve hot.
Notes
Avoid overcooking the orzo.
Add extra broth when reheating if needed.
Best enjoyed fresh and hot.
