  • 1 piece onion
  • 1 piece carrot

  • 6 cups water or broth

Making Restaurant Style Lentil Soup

  • Rinse lentils well.
  • Sauté onion and carrot in oil and butter.
  • Add lentils and broth.
  • Cook until soft.
  • Blend until smooth.
  • Season and serve hot.

Notes

Rinsing lentils thoroughly and soaking them overnight helps reduce gas formation. The soup thickens as it cools, so adjust consistency before serving.
