Ingredients
  

Measuring cup: 1 cup = 240 ml

For the Batter

  • 2 large eggs
  • 4 tablespoons vegetable oil
  • 1 1/2 cups whole milk
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt

For the Filling

  • 1/2 cup diced Turkish sucuk or smoked sausage
  • 1 medium tomato seeded and finely chopped
  • 1 green bell pepper finely chopped
  • 1/2 red bell pepper finely chopped
  • 1 cup shredded mozzarella or cheddar cheese
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions
 

  • Step 1 – Prepare the Batter
  • In a mixing bowl, whisk the eggs until smooth. Add oil, milk, and salt. Gradually whisk in the flour until a smooth, pourable batter forms.
  • Step 2 – Prepare the Filling
  • Sauté the diced sucuk in a small skillet over medium heat for 1–2 minutes. Remove from heat and combine with chopped vegetables and seasonings.
  • Step 3 – Cook the Flatbread
  • Heat a nonstick skillet over medium heat. Lightly grease if needed.
  • Pour about 1/4 cup of batter into the pan and swirl to spread evenly. Cook for 1–2 minutes until lightly golden, then flip.
  • Step 4 – Add Filling and Fold
  • Sprinkle cheese and filling over one half of the flatbread. Fold the other half over to form a half-moon shape.
  • Cook for another 1–2 minutes per side until the cheese melts and the exterior becomes lightly crisp.
  • Repeat with remaining batter.
  • Serve warm.
