  • 1 cup dried white beans
  • 1 tablespoon olive oil
  • 1 piece small onion finely chopped
  • 2 cloves garlic minced
  • 1 piece tomato diced
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 3 cups water or vegetable broth

  • Soak the dried beans in plenty of water overnight.
  • Drain the beans and place them in a pot with fresh water.
  • Bring to a boil, reduce heat, and simmer for about 45 minutes until tender. Drain and set aside.
  • Heat olive oil in a pot over medium heat.
  • Add the chopped onion and garlic, sauté until soft and fragrant.
  • Add diced tomato and cook until softened.
  • Stir in tomato paste, cumin, paprika, salt, and black pepper.
  • Add the cooked beans and water or broth.
  • Simmer gently for 10–15 minutes until the sauce thickens.
  • Serve hot, traditionally with rice.

Notes

Soaking the beans overnight ensures even cooking and improves digestibility. This dish tastes even better the next day as the flavors deepen.
