Soak the dried beans in plenty of water overnight.
Drain the beans and place them in a pot with fresh water.
Bring to a boil, reduce heat, and simmer for about 45 minutes until tender. Drain and set aside.
Heat olive oil in a pot over medium heat.
Add the chopped onion and garlic, sauté until soft and fragrant.
Add diced tomato and cook until softened.
Stir in tomato paste, cumin, paprika, salt, and black pepper.
Add the cooked beans and water or broth.
Simmer gently for 10–15 minutes until the sauce thickens.
Serve hot, traditionally with rice.
Notes
Soaking the beans overnight ensures even cooking and improves digestibility. This dish tastes even better the next day as the flavors deepen.
