  • 1 cup dry chickpeas
  • 1 tsp baking soda
  • 1/3 cup tahini
  • 3–4 tbsp lemon juice
  • 1 clove garlic
  • 3 tbsp olive oil
  • 1 tsp salt
  • 4–6 tbsp ice-cold water
  • 1/4 tsp ground cumin optional

Instructions
 

  • Rinse and soak chickpeas overnight.
  • Cook chickpeas with baking soda until extremely soft.
  • Blend tahini, lemon, garlic, and salt into a smooth base.
  • Add cooked chickpeas and blend for 2–3 minutes.
  • Slowly add ice-cold water until creamy.
  • Adjust seasoning and garnish with olive oil and spices.
