Authentic Kayseri Manti Recipe
Traditional handmade Turkish dumplings filled with seasoned ground beef and served with garlic yogurt and buttery Turkish pepper sauce.

- 3½ cups all-purpose flour
- 1 egg
- 1 tsp salt
- ¾ cup lukewarm water
- 250 g ground beef
- 1 small grated onion
- ½ tsp black pepper
- 2 cups full-fat yogurt
- 2 –3 garlic cloves
- 4 tbsp butter
- 1 tsp Turkish red pepper flakes
- 1 tsp paprika
- 1 tsp dried mint
- Optional sumac
Prepare a firm dough and knead until smooth.
Rest the dough for 30 minutes.
Mix the beef filling.
Roll the dough very thin.
Cut into small squares.
Add a small amount of filling.
Seal each dumpling tightly.
Boil in salted water for 10–12 minutes.
Mix garlic yogurt.
Prepare the butter sauce.
Top the hot dumplings with yogurt and butter sauce.
Serve immediately with dried mint and sumac.
Recipe Notes
- Do not overfill the dumplings.
- Keep the dough covered while working.
- Use full-fat yogurt for authentic flavor.
- Freeze uncooked mantı for up to three months.
